Something I always look forward to when we go on our RV trips is spending plenty of time with a good book.

Hope Valley

When I was a kid growing up we never camped in specified “camp grounds”.  We wilderness camped which meant that we didn’t pay any camping fees  and had more privacy.  This also meant that we didn’t have any conveniences….no water spigots, no toilets of any kind, no picnic tables, no fire pits other than the ones we made ourselves.  A lot more people did that in those days which meant that sometimes we didn’t get our favorites spots as they were already occupied when we arrived.  The other convenience we did not have was “reservations”.

Still the Best Kept Secret

The last week in March we made our annual visit to Sycamore Ranch RV Park.  California is in the midst of the worst drought we’ve experienced in over 30 years so, of course, it finally decided to rain during this scheduled trip.  But, since  January and February had been fairly stressful months and we’d already had to cancel our first trip of the year, nothing short of the park being flooded out was going to keep us from going.  We were so glad we went.

Jalapeno Poppers

These are sinfully good little appetizers that are not only easy to make but are not sinfully bad for you!

Ingredients  :

Fresh, whole jalapenos

Cream Cheese

Turkey Bacon* 

Toothpicks

Remove the stems and slice the jalapenos in half horizontally.

 Make sure to remove all the seeds and membranes…and, remember to cover you hands when you do it!  I just use baggies.

Fill each jalapeno half with cream cheese.

Cut the bacon slices in half.

Wrap 1/2 of a slice of bacon around the jalapeno and secure with a toothpick.

Place on a cookie sheet and bake in a 400 degree oven until the jalapeno is soft and the bacon is crisp…….about 15-20 minutes.

Let them cool a bit before serving or the cream cheese will burn your tongue.  Yummy!
